Shortcrust Apple Cake

image

I still haven’t had enough of apples, so I started baking again, using whatever happened to be at home. I like it, and that is what matters 🙂 For a medium-sized baking tray I used:
600 g wheat flour
200 g butter
50 g sugar
250 g smooth quark
0.5 tsp salt
1 tsp baking powder
2 tbsp water

For the filling I used:
500 g apple slices
2 tbsp sugar
2 tsp ground cinnamon

I mixed the flour, sugar, baking powder and salt. I added cold chopped butter and rubbed it in until the flour mixture became crumbly. Then I added the quark and water and worked it together until it formed a ball of dough. I put it in the fridge for 1½ hours. After that I rolled the dough thinly on a floured table. Half went onto the tray, then the apples and cinnamon-sugar mixture, and on top I put the other half of the dough, also rolled thin. I baked it on the middle shelf at 200°C for 25 minutes.

Rolling it out was absolute torture for me. The rolling pin was broken too, and there was no chance of getting a nice rectangular piece. Then it fell apart when I tried to put it on the tray. In the end I put baking paper on the table, rolled the dough on that and, hop, transferred the whole thing to the tray with the paper. I patched up the wavy edge until it was more or less straight. I tried to press the edges together, but no chance. The top layer of dough wasn’t exactly perfect either and needed patching too. And really, there’s no need to press the edges together. It all gets mixed up in your stomach anyway.
