A quick, simple and delicious apple cake, so good it practically melts in your mouth.

- 200 g butter or margarine
- 200 g sugar
- 4 eggs
- 300 g potato starch or cornflour
- 3 tablespoons wheat flour; I use wholemeal wheat flour (graham flour)
- 2 teaspoons baking powder
- 2 tablespoons sugar, cinnamon, vanilla sugar
- apples by feel. If there aren’t enough, slice some more; if there are too many, they are lovely to eat just as they are.
First I sliced the apples. I don’t peel them and that works perfectly well. Only if there are large ‘birthmarks’ on the skin do I cut those bits away.
I beat the butter and sugar until pale and fluffy, then added the eggs one at a time, beating after each one. In the end I had a very pale and airy butter-egg-sugar mixture.
Then I mixed together the starch, flour and baking powder and added them to the butter mixture. I used the mixer to combine it. I poured the batter onto a baking tray, spread it with a spoon and laid the sliced apples on top.
I mixed cinnamon, sugar and vanilla sugar together and sprinkled it over the cake. The plan had been to cut strips of puff pastry and make a lattice on top, but the pastry was frozen, so I thought: next time…
I switched the oven on when I started beating the butter, and by the time I was ready it had reached exactly 200°C. I baked the cake for 25 minutes on the top shelf at 200°C. I have an electric oven with heat from above, so I can’t really say how it behaves in other ovens.
By the time I took the photograph, most of it had already been eaten 🙂
